School Lunches: Rachel's Favourite Sandwich!

I am seriously in love with this sandwich.  I just ate it again today.  Just make sure you keep it cool with an ice pack!

Ingredients
- chopped chicken
- 1/2 plum tomato
- 1/4 avocado
- 1 tbsp goat cheese
- 1 tsp dijon mustard
- 2 slices of whole grain bread (or lettuce wraps or wholegrain wraps!)
