These are by FAR my favourite muffins of all time. I make them often and eat them for snacks or for a quick breakfast as I'm running out the door. Let me know if you've tried the recipe and what you think! :)
Wholegrain Raspberry Chocolate Chip Muffins
Preheat oven to 350 degrees F.

eggs
2/3 C Brown sugar
1/2 tsp vanilla2/3 C Brown sugar
1/2 C canola oil OR 1/2 C applesauce
3/4 C Milk or buttermilk
1 C mashed banana (about 3 bananas)
Beat eggs, sugars,oil, milk,bananas, soda and
vanilla well.
1/2 tsp salt
1 1/2 C Bran
1 1/2 tsp b.soda + 1 1/2 tsp b.powder
1 1/2 tsp b.soda + 1 1/2 tsp b.powder
1/2 C ground flax seed
1 C whole wheat flour
1 C whole wheat flour
1/2 C large flake oats
Stir dry ingredients into wet ingredients a little at a time. Then gently mix in
2/3 C choc chips AND/OR 1 C fresh (or frozen) blueberries/raspberries
Bake for 15-20 minutes or until the toothpick comes out clean.

Thank you so much for this yummy recipe! I just got through making them and they came out great except I totally forgot to add the bananas :(..oh well there is always next time). My family loved them as well...Keep up the great work :)

These were delicious! However I was wondering about you Nutritional Information, Is it based of pr 100 grams or of 1 serving?
ReplyDeleteThese were amazing. I am actually using them for a school project by making chocolate zucchini muffins to represent the stereotypical Frankenstein monster and using this version for Mary Shelley's description of the monster. :) I love these so much!
